This PR updates the legalURI schema to make the email field mandatory. By providing a recognized, binding method for legal communication, DAOs will comply with global legal standards.

I don't think this is necessary at the moment. I'd rather leave legalURI as open as possible for now until we start testing it out with some partners.

Also, it's intended to be a URI. So the result shouldn't be an array.
